Colombia FERNANDO GARCIA from Industra Coffee in Brno will surprise you in a cup with a pure, elegant experience that combines aromatic jasmine, sweet papaya and juicy nectarines. All wrapped in the delicate acidity typical of the Chiroso variety , which has become increasingly popular in recent years thanks to its complexity and floral character. The coffee has a velvety texture and a beautifully balanced flavour profile that will be appreciated by anyone who enjoys clean, washed filters full of fruity and floral notes.

Behind this harvest is Fernando Garcia, a farmer who has a really strong and human story behind him. In 2004 he had to leave his home in the Caquetá department because of the armed conflict. He found a new home in El Pital in the Huila region, where he started growing crops. He started with beans, moved on to peaches and finally found his passion in coffee. In addition, he became active in the resistance against the construction of dams that would devastate the local nature and force hundreds of people to leave their homes. Today, Fernando continues to be a voice for sustainability and diversity - planting less traditional varieties and tending the landscape around his farm so that water and biodiversity are preserved for generations to come.

The washed method of coffeeprocessing, also known as washed, is one of the cleanest and most precise methods, placing emphasis on the bean itself and its origins. After hand-picking, the coffee cherries are stripped of their skins and most of their pulp using a depulper. This is followed by fermentation in water tanks, usually lasting 12-48 hours, during which time any residual pulp (mucilage) that might affect the flavour is naturally broken down. After fermentation, the grains are rinsed several times with clean water to achieve a high purity and clarity of the final profile. Drying takes place on raised beds or concrete surfaces for 1-3 weeks. The result is a coffee with a clean and distinct flavour, higher acidity and a subtle complexity that perfectly reflects the character of the variety and terroir.
