This exquisite Pink Bourbon comes from the El Arrayanal farm in the Pitalito region, Huila, and brings delicate notes of white grapes, blood orange, and jasmine tea. This coffee is the work of Elicenia Chilito Guaca, a young and energetic farmer who, together with her husband, takes incredible care of their plantation. Although she grew up among coffee growers, she never thought she would stay in coffee farming. After studying in Pitalito, where she completed a coffee quality control course, she realized her future lay on the farm. That’s when she decided to return and, together with her husband, began expanding the plantation and buying new land. The whole family is involved in farming activities, and Elicenia not only grows exceptional coffee but also shows her children that the countryside is not just a place of work, but also an opportunity for growth and development.

At the El Arrayanal farm, both coffee harvesting and processing follow traditional Colombian methods that enhance the purity and quality of the Pink Bourbon variety. After harvesting, the cherries are washed and allowed to oxidize for 48 hours before being de-pulped and fermented dry in a waterless container until the next day. This is followed by traditional washing and 15-day drying on raised beds. The farm also emphasizes ecological processing, using a desmucilaginador, a special machine that removes the pulp through centrifugal force, minimizing water consumption and pollution. The remaining coffee pulp is then dried and added to compost. This focus on quality, tradition, and sustainability makes this coffee a true gem that you shouldn’t miss.
