The Santa Maria farm in the Santander region is one of the farms owned by Oscar Daza, who took it over from his father. The farm’s operations are fully managed by Oscar’s wife, Mrs. Mildred Daza. Under the Manos de Mujer project, along with a team of 30 women, they manage over 80 hectares, covering everything from administration to harvesting, processing, and coffee quality testing. The women participate in every step necessary for coffee production. Thanks to their work, they are improving the economic conditions not only for their families but also for the entire community. Around the coffee trees, up to 15 different species of trees grow in three distinct canopy levels. The highest tree layer reaches about 12 meters and is the most attractive to both local and migratory birds.
The Geisha variety, known for its incredible delicacy and elegant complexity, was grown at an altitude of 1600-1700 meters above sea level. The anaerobic natural method, used in processing this coffee, involves fermenting the cherries without exposure to oxygen, which accentuates the fruity tones and adds complexity to the coffee. After fermentation, the cherries are dried in the sun until they reach the ideal moisture level. The Huila region is famous for its ideal conditions for growing high-quality coffee. Thanks to the rich volcanic soil and mild climate, the coffees produced here are among the best in the world.
