The processing of coffee at the El Mirador farm combines precision and innovation. After harvest, the coffee cherries are floated in plastic tanks to remove impurities, and then they are fermented for a total of 96 hours – first 48 hours with the skin, and then another 48 hours after de-pulping. This process takes place in sealed plastic bags, meaning anaerobic fermentation, which contributes to the rich and complex flavor. The beans are then slowly dried for 8 days, ensuring that all flavors fully develop.
