In the cup, you will notice a distinct acidity, which is perfectly complemented by light vanilla and the typical floral jasmine notes of the Geisha. The body of the coffee is created by a light, subtly aromatic earl grey tea. Be careful not to drink the whole bag at once!
Geisha or Gesha is a high-quality and sought-after variety known for its unique flavor profile and exceptional quality. Originally from Ethiopia, from the village of Gesha, it took its name from there, but it gained popularity later when it was introduced to Panama, where it thrived in the unique climate and altitude of the Boquete region. Geisha coffee is characterized by its floral and tea-like notes, often with hints of jasmine, bergamot, and stone fruit. It typically has a light body and bright acidity, making it a favorite among enthusiasts and coffee connoisseurs. It is often grown at high altitudes, which contributes to its flavors and its prized position in the specialty coffee market. And this Geisha from Aristobula Raya's farm is no exception.
With the washing (washed) method, we encounter many excellent coffees across continents. The only thing that influences the flavor is the coffee bean itself, which is mainly affected by the variety (in this case, the prominent Geisha) and the region where it is grown (climate, soil, altitude). For this reason, it is essential to ensure that the fruit ripens sufficiently and that the beans inside are nourished by sugars. After harvesting, the cherries were mechanically stripped of their skin and part of the pulp by a coffee press (called a depulper). They were then placed in a concrete water tank, where they fermented for 24 hours. The tank was emptied, the beans were rinsed, and they were spread out on raised African beds, where they dried for 3-6 weeks (the same as with natural processing). The result of the washed method is generally a more delicate tea-like flavor, a subtler body, and sophisticated tones.
