Coffee Pirates Vienna is not just a roastery, it is a passion, a craft and a symbol of love for coffee. Founded in 2012, it became the 1st organically certified roaster of the third wave in Vienna, bringing a breath of fresh air to a city with a rich coffee tradition. Coffee Pirates combines the heritage of traditional Viennese coffeehouses with a modern approach to fine coffee, making it a favorite not only for locals but also for visitors from all over the world.

The roaster specializes in carefully selected beans from the best coffee farms around the world. The philosophy of Coffee Pirates is an emphasis on transparency, quality and long-term relationships with farmers, to whom they pay up to 3-5 times more than normal market prices. Every coffee roasted here has its own story - the story of the farmers, their efforts and nature, which donated the best beans.

Tradition in a new guise

Located in the heart of Vienna's 9th arrondissement, it represents a revolution in the world of coffee – it aims to show that roasting is a beautiful craft and that coffee can taste like coffee, not burnt coal. As one of the co-owners, Werner Savernik, says, "We wanted to bring coffee back into the spotlight and show the differences in flavors according to origins, varieties and roasting profiles." 

Viennese café culture is listed on the UNESCO list as intangible cultural heritage. Coffee Pirates brings this rich history into the present. "Austrians are not in a hurry to have an espresso and leave, like in Italy. We sit for hours, enjoy the atmosphere, read newspapers and chat with friends," describes the philosophy of the Savernik roastery. Coffee Pirates maintains that atmosphere, but adds something extra - homemade food, Wi-Fi, filter coffee and the option to buy specialty coffee. It thus creates a space where the elegance of old times meets the modern world.

Variety of flavors and preparations

Coffee Pirates take the coffee experience to a new level. Although Viennese classics such as Melange or Kleiner Brauner still have their place, the café also brings new trends. Here, customers can try flat white, double espresso made from selected beans and the increasingly popular filter coffee. It always offers at least two different coffees to prepare with the V60, Kalita, AeroPress or Chemex. Their specialties also include cold drip coffee, which brings a refreshing taste experience.

Emphasis on quality and sustainability

Coffee Pirates is committed to supporting farmers and ensuring transparency in their supply chain. They work with renowned importers such as Nordic Approach and Mercanta and regularly visit the farms and cooperatives where their coffees come from.

The roastery is also BIO certified through Bios-Österreich, which ensures that their products meet the highest ecological standards. This approach underlines their commitment to sustainability, quality and respect for nature.

Coffee Pirates reward farmers with fair prices that are 3-5 times higher than normal market prices and honor their efforts to produce choice coffee!

Against low-quality and commodity coffee

At Coffee Pirates, we believe that the fight against poor quality coffee starts with every cup. "We're the good, friendly ones fighting against bad coffee," says Savernik. A lot reminds Yellow Fruit by Sebastian Ramirez roasted in Fiftybeans. But it tastes better. It's sweeter.
In the taste of a mix of sweet and acidic things: cherries, pineapple, lychee, mango. A little bitter chocolate. Rather, no. I don't feel the bananas explicitly either. Rooibos, caramel and Bergamot maybe somewhere in the flavor.
I'm not sure it's dark roasting as he writes commentors below. It tastes well at 91 ° and 96 °.
At 88 ° it is more acidic, 91-93 is sweeter.
The moon tastes fantastic, not losing smell or taste, compared to Yellow Fruit what is better fresh.
It is not for opponents of Co-Fermented coffee. You must enjoy it.
The price, but I'd rather pay extra for an even tastier alternative to Yellow Fruit, which is more consistent.
Within 2 weeks of roasting, it tastes bitter, let it rest.

Water temperature: 91-93, I tried 95-96 and 88.
Grinder (setting): Fellow from Gen.2 (5)
Process: Leave 2 weeks after roasting. 50g Bloom, Swirl, ~ 30s wait, the rest of the single pour, swirl. Roughly at 1:50 is done. Leave to 50-55 °.
