So why did they choose coffees from Brazil and Rwanda? The roasters wanted to create a more conservative coffee with a full-bodied flavor leaning toward chocolatey notes, but still with a hint of fruit and a subtle floral aroma. Brazil brings that sweet nougat body, while Rwandan coffees contribute a beautiful fruity and tea-like profile, offering the best of their origin in every cup.
This batch is naturally processed, and before drying, the cherries are washed and floated to remove any defective beans. After harvesting, the cherries are spread in a thin layer to dry in the sun. Some producers use concrete patios, while others dry the fruit on so-called African beds—elevated platforms that allow better airflow, speeding up the drying process. The cherries must be turned regularly to prevent mold and rotting. Once dried, the beans are mechanically stripped of pulp and skin, and then the coffee is ready for export.
