About San Agustín

San Agustín Roastery is Spain's specialty coffee roaster representative for Southern Europe. With its quirky and original logo and name, it is a memorable member of the specialty coffee community. The roastery itself was established in 2011, when it was founded by Luis Ángel Garrido whose enthusiasm for roasting coffee began after gaining success following his barista training at Le Café.   

In all his coffee, Luis always tries to find a certain uniqueness. His prime focus is the resulting cup of flavours where the delicate intricacies of the coffee become an expression of the crop itself.  The coffee trees bear fruit all year round which makes it practically impossible to ensure that the resulting batch of coffee will taste the same as the previous one- and that's exactly what struck the interest of San Agustín. They love to discover new cultivars, methods of processing and generally experiment with all the changeable parameters that make the final cup of coffee so versatile. They put a lot of emphasis on ensuring that they only roast the freshest beans from the latest harvests, thus setting the standards high to showcase to their customers the heights that incredible coffee can reach with that little more care and attention.

To achieve the highest quality and freshness, they never stockpile. This means that you always have to order coffee from this roastery in advance, in order for them to ensure that all the coffee they buy green and roast fresh is going to be sold. This guarantees ultimate freshness, because it means that they have to roast every single day (!!) which makes them quite unique in their dedication to freshness. And to make sure that this freshness lasts, they package their coffee into vacuum packed bags with an aluminum layer on the inside. And last but not least, they roast most of their coffee as an "omni roast", i.e. somewhere between coffee for filter and espresso, in terms of the degree and lightness of roasting. This makes their coffee that much more versatile and fun to play around with, and has found a place in the hearts of many coffee lovers worldwide.
