Dry processing, also known as "natural processing," is one of the oldest and most traditional methods of processing coffee. After harvest, the whole coffee cherries are dried in the sun, often on raised beds or suspended nets, until they soften and are ready to be peeled. This process can take several weeks and requires careful monitoring and regular turning of the beans to prevent mold and rot. Dry processing typically results in coffee with a richer, fuller flavor profile, with fruity and honeyed undertones. The resulting coffee is more demanding to roast but rewards you with a unique, intense flavor experience.
