Can you please introduce your roaster in a few short sentences?

A small roaster focusing on African coffees (mainly Ethiopia) and coffees from Central and South America. Gwilym Davies, the 2009 World Champion, and his assistant Ondřej Veselý are in charge of roasting. Petra Veselá, author of the Big Book of Coffee, handles orders, packaging, and quality control.

What is the story behind your name and logo?

We wanted a fun and playful name. The logo was an obvious choice since many people recognize us by our two dachshunds.

What is the hardest part of being a roaster?

For a small roaster, it's buying green coffee. Large roasters fill the container and buy directly from the plantations. Small roasters do not have this option.

What's one thing about coffee that people still don't understand?

Many people still don't know that coffee is a fruit, and because of that, it offers an incredible number of different flavors and aromas. It is not just bitter and universal.

What's one thing you wish you'd done differently if you were starting roasting over?

So far, probably nothing, we are satisfied.

What was your biggest failure?

I once bought too much green coffee, which sat in our warehouse longer than we would have liked. We are now more careful and order less and more often.

What are you most proud of?

When roasting, it goes well, and our coffee tastes good.

What will the premium coffee market look like in 2025?

Choice coffee will reach far more home users, who will have increasingly high demands on the quality of the beans. The number of new cafes will certainly grow, and they will have to try harder to differentiate themselves from each other.

Tell us about 'The Cup' - the best cup of coffee you've tasted.

It will sound like a cliché, but we had the best coffee in Panama, either at the Peterson farm, Esmeralda, at the Wilfords' Finca Elida, or with Jamison at Finca Deborah. Panama Geisha is such a clean and vibrant coffee.

Timemore Chestnut C2: All-metal worker for great money

Each category of coffee accessory has its own imaginary winner, and the Chestnut C2 grinder from Timemore, China, is definitely on the middle-class podium for manual coffee grinding. 🥇 It is perfectly elaborate and grinds with surgical precision.

Quality metal and only a minimum of plastic

At first glance, you would easily rank the Chestnut C2 one category higher and it would not be surprising. The grinder not only looks great, but is also well made. Inside the all-metal body with plastic elements you will find two grinding 38mm conical stones 💎 made of hardened steel (stone: G1) and two bearings that attach them to the spindle. An all-metal ground coffee container is attached to the bottom of the body, which you connect with the grinder for a few turns. The Chestnut C2 is topped by a sturdy handle with a plastic lid. The aluminum is perforated over the entire surface of the grinder, so you can be sure of a firm grip. ✊

Accurate grinding in seconds

The grinder is an excellent companion for the preparation of filtered coffee. You can easily set the grinding roughness on the jumping mechanism, which is revealed to you after unscrewing the collecting container. 🎛️ Turn to the left to grind finer, to the right to set a coarser grind. When adjusting the roughness, do not forget to put on the handle, otherwise the axis would rotate. Once set, it's time to grind. Put the collection container back on, fill the grinder with coffee beans (it can hold up to 25 g), close the lid and you have the green one. The first thing you will notice is how fast and comfortable the grinder grinds. Thanks to the well-sharpened stones, you will feel almost no resistance and you will be done in a moment - the Chestnut C2 can handle up to 1 g / s for coarser Frenchpress grinding! 🏎️

The beautiful premium look of the Chestnut C2 will definitely fit into your coffee equipment, and you also have a choice of seven colors. 🎨 Timemore also had a solid carrying case sewn to the grinder with separate parts, so you don't have to worry about scratching the metal body along the handle. Chestnut C2 is also produced in a more bulbous version of the Max, if you often grind larger batches.
